How do I prevent my cursor from jumping about?

Probably by replacing the mouse. An erratic cursor is usually caused by a mouse fault.

Tesco will sell you a good quality optical mouse for just under a fiver, or just over a fiver for the wireless version.

Try it on a different surface first, optical mouse can be a little touchy about being used on some sorts of patterned surfaces.
as chuck says an optical one can be confused by the surface its on, if its the old ball type its usually down to the little spindles/sensors with a bit of crud build up on them..
Just take take the plate of the bottom and remove the ball it should be fairly obvious if it is dirt.
I occasionally have the same problem but I use a touch-pad, not a mouse. Any ideas what could cause it please?
