Just got back from Spain where I ate a tapas dish of tripe.  It was delicious, does anyone have a recipe?  I live in the north and can get tripe ok, but people here just eat it cold with salt pepper and vinegar on, it doesn't really taste of anything.

It's called callos (cal yos) will look out the recipe for you and get back, I personally won't eat it.

Ooooh, can't stand tripe, my Mum used to send me to the tripe stall in Preston market once a week. You could buy white or brown tripe. My Mum used to fry hers.

As for you Spudqueen, well Lancastrian tripe won't be a patch on Yorkshire tripe!  :-)
