I too have been off work (and still am) with Manic Depression (8 years now) so I really do wish you well.
I can only say be honest and tell them in straight language what the cause has been.If they don't employ you because of this, then they are not worth working for!
I know being mentally Ill is not an easy thing to make people understand,but the more that employers know it exists,and that people recover,then the less it will be hidden away and not talked about.

Why should you have to give any explanation? In an ideal world, you tell the truth, but in the real one (!) perhaps a little creativity might make a more positive first impression - eg were you looking after children? choosing to be at home while partner worked? Pursuing a hobby? Don't make anything up - it's too easy to be caught out! - just re-assess what you were doing & present it in a favourable light.
