I have a slowcooker recipe for gammon in cider with apples. What vegetables can I serve it with? There are a couple of shallots in the recipe and I'll probably serve it with some roast potatoes but what other veg. can I serve apples successfully with?

I'd just do mashed potatoes, pushed through a potato ricer, and beaten to an indencently rich fluff with inordinate mounds of real butter and hot milk. The rich creaminess is a perfect counterpoint to the slightly acidic and sweet sauce and the salty-ish nature of the gammon. But that's just me.......................
That is an alternative to the roast potatoes Kim as I LOVE mashed potato! As this is a biggish piece of gammon I'll do roasties one night and the mash another. I was looking for veg. which could be eaten with the dish but I think I'm going to settle for a veg. soup as a starter then serve the gammon with apples and potatoes. I wonder if roasted parsnips would go well with apple?????????
