Hi,dd1, why not make yourself a nice fruitcake replacing the sugar wuth granulated 'Splenda' ( the replacement figures are on the 'Splenda' box) I'm also diabetic, injecting four times a day and find you can make lots of things suitable if you use 'Splenda' and 'Canderel' in place of sugar. Have you tried toasting Shredded Wheat and melting cheese on it in place of toated bread, it tastes great and it's a different texture. Also good with baked beans, eggs etc.
Bowl of cereal (not sugary) is quite filling for supper.

thanks for those guys...i eat ceral in the mornings so that would start to get boring, and ive tried a few things with the reduced sugar ( ginger wine at new year is nice with it ) but youve put me in the mood for a fruit loaf..the wifes good at them...lol, jeepers i thought i was bad with the injections , i take 2 a day but 100 units each time, good luck.
Grill some lean bacon & tomatoes; toast some granary bread; add bacon & tom to toast & sprinkle with a lowfat cheese - for a heartier meal, add some scrambled egg too.

The above is taken from the GI diet - my partner is diabetic and since starting this diet he has felt much better. It's slow sugar release - with good equal amounts of protein, grains etc.
