Watership Down by Richard Adams springs to mind.

Look through books written by Avi (he just has the one hame)
There are several about mice, the first in the series is Poppy.
He also wrote about some rabbit-like creatures, title Perloo the Bold
Not all Avi's books are about animals, he has quite a wide range, including spy thrillers for kids

The tale of Peter Rabbit by Beatrix Potter? Depends what age group you have in mind.
