I've got a gorgeous fillet of beef to roast. Nice cut which i've marinaded in wine, soy sauce and honey....

now of course i don't want this to be ruined during the roasting process...

it's around 850g. I want it o be be medium-rare. If i roast it at 200C in the centre of the oven how long should i leave it in for?

Should it be covered in the roasting dish or left open?

thanks all..........X

Do you actually mean fillet - the most expensive cut? Or a joint such as topside?

Very different roasting times.

Yup it is a FILLET (not topside)

...you're right it IS expensive...

hence why i don't wanna muck it up during the roasting :-)
Hi!

I'm not a huge roast beef fan, but I found some videos that might help you: http://www.sutree.com/Learn.aspx?q=roast+beef
My friends showed them to me a week ago or so when she wanted to make one her self. She said she found there good tips and recipes.
If its good for my friend, its deffently good to you! :)

thanks may and ethel 4 ur responses -

i'm off out to make the most of the sunshine....so will only be able to say "thanks" to any other AB'errs later when i get back indoors...
I'd be tempted to fry it - maybe butterfly it at the end to cook the middle. I've never roasted fillet so I wouldn't like to hazard a guess. Hope it goes ok anyway.
Best to grill it, because fillet "joints" are quite small, but if you've roasted it, do it slowly for about an hour.

may 1982 - checked out that link you sent. it's fab. gonna bookemark it for future recipes!

(By the way the roast came out brill - even if i say so myself!) :-)
pre heat your oven around gas mark 6 along with a roasting pan. season your fillet first with salt and peper, heat a little olive oil in a frying pan and seal the fillet for around 2 mins then transfer to the oven do not cover with foil as this can stick to the fillet and burn. you need to cook it for around 15 mins for med rare, once cooked remove from the oven and rap it in foil and leave to rest for 20 mins
