3 Answers
hope somebody out there can help me?
I had an old recipe ((maybe 20 years ago) for Mexican Baked Potato. cant find the recipe and my son in Oz wants it for his kids.
from memory, it had sweetcorn, garlic sausage, tabasco and cheese topping, does it ring any bells?
fingers crossed, and Happy New Year to all

I have a Mexican cookbook (NOT texmex) I got in Mexico City. A lot of their potato dishes are made with diced potatoes, fried and then eaten with a variety of sauces made with chiles, chorizo, tomato, peppers and mexican cheese, so the recipes from Marval are the right sort of thing. Another thing they make is potato cakes from boiled potatoes mashed with the hand so they are coarse, made into cakes and fried and then served with a mexican sauce poured over it, with similar ingredients to above.
