Anyone know why if you steam red cabbage the water in the bottom of the steamer is green. If you boil it, the water is, as you would expect.......red.

I've been told that this is due to the acidity level in the water. If the red cabbage is boiled with a little vinegar in the water it will stay red because of the acid. The water in the bottom of the steamer has no acid and therefore turns green.
