whats the difference between Windows 7 home and Windows 7 home premium and the Windows 7 Professional ?

There is not a product called "Windows 7 home". For Windows 7 the only "home " product is Windows 7 Home Premium.
There is a "Windows 7 Home Basic" but it is NOT available in the UK (there WAS a Vista Home Basic in the UK but not in Windows 7).
If you are a home user then Home Premium will be fine.
If you work for a company and wish to connect your laptop into a Windows network then you may need Professional. It also has a few extras for people who requite more techncial features.
But if you only ever work for home then you DONT need Professional and Home Premium will suffice
