I have seen this in a recipe but am not sure what type of bread it is - Can anyone shine any light please?
Also, if I can't get it locally, what would be an equivalent type of bread to buy?

The "better" supermarkets will probably stock a sourdough-style bread - Waitrose do one called pain au levain - though it won't quite have the "edge" of a proper sourdough.
