Alternately, simply mix one cup of brown sugar (dark's the best in my opinion) with 1/2 cup of any good mustard and coat the roasting ham (forgive me, but being an American I'm not sure what "gammon" is).
Leave the ham uncovered for the last hour of roasting/baking. Makes a nice crust as well as adding the flavor.
Mrs. C likes to add about 1/2 cup of ketchup with the brown sugar/mustard mix, but every one's to kind to tell her she's a pagan... but, each to his/her own...

They all sound fantastic! Here is another one. It is supposed to be for steaks or bacon chops, but you can make the entire sauce seperately as an accompliment rather than mixing it together half way through the cooking.
Gammon steaks in cider sauce.
1tpsp Mustard, the grain mustard works very well in this recipe.
Half a pint of cider.
1oz demerara sugar.
half oz butter or marg.
1 and half tpsp plain flour.
Put the steaks in an oven heat proof dish. Mix the mustard with a little of the cider and spread over the gammon steaks. Bake in the oven at approx 200c for about 15 mins. Put butter, flour and remaining cider in a saucepan and heat whisking contstantly until the sauce thickens and is smooth. Season to taste. Take out the steaks and mix in the sauce into the mustard mixture that has been cooking over the steaks . Bake for a further 15 mins or until the steaks are cooked through. The sauce should be enough for 4 steaks, although I like a lot of sauce so just make the same quantity for two of us!
Serve with potatoes and other veg of your choice.
Cheers Sue
