Easy veg lasagne - onion, some mushrooms, grated carrot, tin of chick peas, peppers, sweetcorn..any veg you like really, ive done it with sweet potato, green beans all sorts. then chuck a tin of tomatoes over it or a jar of dolmio etc, a veg stock cube n a bit of water. layer that up with lasagne sheets (i actually find the cheaper ones are better texture) and white or cheese sauce..packet or jar if easier for u. end with layer of white sauce, sprinkle with cheese then bung in oven for about 40mins
