Polenta is made from maize. The dish originates from Italy, and was originally a diet staple of peasants. It is particularly good with tomato and vegetable sauces, but beware, it needs a lot of seasoning. Polenta can be found in all supermarkets, inexplicably stocked near the instant mash, I find! Well worth trying, especially for those on gluten free diets. Best of luck trying it! PS: There is a brand of ready mixed polenta which can be sliced for frying. Avoid. Nasty.
