As difficult as it is you must treat him like any other employee.
As a minimum make sure he is given a written warning or if you would sack anyone else then you are at liberty to do the same.
If he is taking liberties with your profit by having a lockin then what else is he doing? Would you trust any other employee if they did this?
It is your business and your profit he is giving away.

I really sympathise with you... Not an easy situation to be in, but I'm afraid you do have to let him go.... I know you're trying to find the words to say it, rather than ask advice about what to do... I'd just calmy sit down and show him the evidence... You do have to treat him like any other employee... He is taking a liberty, and also putting you in a very tricky position for a reference in the future.. Good luck!
You need to be able to explain the shrinkage come your annual audit, how will you do that unless you make situations like this a matter of record? You should alter his working pattern and not let him be alone in the bar or have a key, that can be done simply by 're-structuring' and revisting your staffing profile.
