has anyone got a good recipe for an easy to make dessert, either one that can be frozen or made the day before. I've promised to make two desserts for a lunch time party and one of the ones I'm making is quite complicated & takes quite a while to make so I'm looking for an easy way out for the second one.

fresh raspberries and cream in a chocolate roulade

fruit salad has got to be the easiest thing and handy for those on diets
yep, fruit salad. i make 2 or 3 a week for us and it takes maybe 10 minutes to make.
quick recipe for a large bowl full:
i use tropicana tripical fruit juice as a base, there's enough citrus in it to keep the fruit from going brown.
4/5 bananas
a large apple (we like braeburn)with peel on, chopped very small
2 large pears (very ripe if poss) - ditto -
5 or 6 clementines/tangerines, segmented and cut in half
probably 2/3 cups of seedless grapes, halved.
very ripe melon is also nice added to this as are firm strawberries, and you can adjust all the fruit to suit.
that should have been tropicana tropical, never tasted the tripical :)
bread & butter pud - chucked in dish & oven for 20m, dirt cheap & delish....cover with fresh cream, lemon/orange zest for luxury finish.
Eton Mess....layer broken meringues ( best if homemade),raspberries, and fresh whipped cream in glasses. So easy and quite scrumptious.

Thankyou for all your suggestions, I'm sure one of them will be ideal.
If you make Eton Mess fresh then it's the best but if you make it the day before the meringue will turn to mush......
