Secret to get coating to stick on peppers - stick them on a fork, and blister them over the gas, or grill them till the skins are black, put in plastic bag for a few mins, them peel the skins off - then preceed as normal, stuff with cheese, flour, egg, crumbs, egg and crumb again, fridge to rest 1 hour, fry.
