It probably wont be the same as you had in mind NoMercy but you can use plain flour in a fruit cake. Leave the fruit to steep overnight in an infusion of tea and freshly squeezed orange juice. Makes a really tasty tea bread type cake which freezes extremely well. I usually cut the cold cake in two and freeze one half for another day.
I made a three tier wedding cake for my neice last year was asked at the reception to make two more for some couples getting married have thought about making it a business at 62 years well maybe !!
