Pizza Express Mixed Leaf Salad -- why shredded beetroot ?

At the beginning of summer Pizza Express started adding shredded beetroot to their mixed leaf salad (mixed saled leaf, a few tomatoes and sliced cucumber).

Does anyone know why? It stains the salad dressing a flourescent pink.

Last night the beetroot I pushed aside made a pile over an inch tall.

don't know for a fact, but beetroot is quite cheap compared to the mixed leaves, so this can 'pad' out the salad without the expense so maybe cost is a factor.

i agree, beetroot is cheap. and not particularly tasty (at least I don't think so). You would think that with the price they charge per pizza they wouldn't have to cut such corners.

But then beets are supposed to be really good for you, so maybe they're just looking out for our health?
