What to do with a duck?

Hi...

I bought a whole, very large duck at the weekend but have not a clue how to cook it other than roast... is there any yummy recipes out there that anyone can suggest?

I would say it's best to roast a whole duck.

I hope you fully realise you'll be eating Donald, and a bit of guilt will creep in when you come to eat him.

But Donald tastes sooooo nice lol...
If you do that ^, prick the skin all over and roast on a standing rack so all the fat drains out/off...
Ok...agreed, Kat......no guilt....just make sure you have hoisin sauce and lots of pancakes :0) xx
soursweet roast duck

Slit the skin and stick lemon peel underneath shove a lemon into the cavity and brush with honey at intervals while it is roasting, take all the juices and the cooked lemon from inside remove as much fat as you can and put the rest in a blender with about a tablespoon of flour, add about a cup of white vermouth or very dry white wine and heat in a pan until smooth hot and mmmmm use instead of gravy you will probably need to put it through a sieve to remove the lemon pips etc.
Or there is the classic duck in orange sauce. Roast the bird over a rack. Use a couple of tablespoons of the fat, mix with flour and add orange juice (I use a pint from a carton). Meanwhile slowly fry and onion until it is very well cooked but not burnt. Add the orange juice mix and heat until thickened. If you have leftover fat leave to cool in a tall container of some kind. Take the fat off and use to make the best roast potatoes ever.
Or, roast duck with cherry sauce. As above but substitute bottled cherries/juice for oranges.
