is it correct to take leaves off a tomato plant that has no tomatoes on it

It's usual to remove side-shoots once fruit has set.

Don't remove all of the side shoots leave the first leaf. The leafs make the nutrient for the whole plant so you need some.

Each of my plants now have 4 trusses bearing fruit,I have now removed all branches below the bottom truss of each plant.These lower leaves are usually the ones that develop fungus and also get the least amount of sun. It also makes feeding and watering easier.
You can also thin out other leaves to allow the sun onto ripening fruit.

The leaves are the food factory , without them there can be no growth or tomatoes.
Once the tomatoes are set on the bottom truss that is the time to start using a tomato fertilzer.
The reason for a fertlizer is mainly to boost flower production and tomato growth.
Once three or four trusses are set you can remove some of the lower leaves but not too many as they are making and sending food to the growing tomatoes.
Once the trusses are set sunlight is not so important but warmth is, to encourage ripening.
