ready, steady, cook - mercia and rowan (and anyone else)

in the bag are: 3 courgettes, 6 large vine tomatoes, a bag of red onions, some meat (lamb, chicken or sausages), some tiny little new potatoes.
PLUS anything from the cupboards (the usual staples - rice, pasta, beans, 4 vinegars, herbs, spices, etc).
what can i make for this evening that's a bit different from the usual mediterranean roast veg served with the meat? please help :)

meanwhile, cut tops of four of the tomatoes and scoop out the seeds. Boil the potatoes and dice, fry an onion and a clove of garlic, season, add tomato seeds and some garden peas if you have them, or cut up small green beans. Fill tomato shells with potato mixture and sprinkle with a little cheese or dot with butter and bake for about 20 mins whilst cooking the lamb or chicken. Cut ends off courgettes and make into ribbons with a veg peeler. boil for two mins, strain, drizzle on lemon juice, soy sauce or some chilli sauce and some sesame or pine nuts if possible and serve with stuffed tomatoes and meat

how about giving us a regular recipe like youve just given on here...?
i bet a few of us would appreciate, i know i would anyway, to know how to actually cook some of your meal ideas, especially if theyre not too elaborate, you know something we could all have a bash at.
so a complete run down, like above, of ingredients, and how to do this that and tother with them would be great, and then we too could rustle up something nice and tasty for our dinner!

actually, himself came in having got rained off his voluntary thing and said he just fancied pasta with the veg made into a sauce so that's what we're actually having, but i'm definitely saving your ideas for another time. blooming great - stuffed tomatoes, stuffed courgettes, courgette ribbons, marinated meat.
it's the thinking of different things that i find most difficult, actually doing it is fairly easy so i really am most grateful :)
ps. mercia, hope all goes well at the hospital. i have two bionic hips so if there's anything i can help reassure you about just ask. i've walked up snowdon with mine and regularly fell walk, they've given me a new lease of life.
