I took some broad beans out of the freezer and by the time they'd defrosted, they'd turned black!!!

Is this a sign that they don't like freezing? or is something more sinister?

I'm nowhere nearer knowing what caused the blackness though

I freeze my own broad beans and they do freeze satisfactorily. I don't defrost them for use, but put them directly into water, and heat. I can't offer an explanation for the blackness, I'm afraid.

Some vegetables (eg okra) go black from cold ... and broad bean plants turn black in frost. I think the previous answer's right - cook straight away, and don't defrost.
