Whats the name of the banjo(?) music that's always used to create an impression of 'the sticks/backwoods'.

I think the music you're after is 'Dueling Banjo's'- I think it's by Chet Atkins & Roy Clark, and was featured on the film Deliverance, starring Burt Reynolds. Great film-Great tune!!
If you're hunting for the track, the "Artist" is actually 'Deliverance' Soundtrack although the musicians on the track are Eric Veisberg (guitar) and Steve Mandell on banjo, but any record shop (if you're buying the old fashioned way) should know what you want if you asked for "Duelling Banjos" which is the title of the track.
