Commi chefs are cheap labour and you have to be determined to do anything in the kitchen; try hotels ,big and small .Even somewhere local to ge† some experience. They will give a day off to go to catering school.It,s tough but you will soon see if like it. It,s also long hours...you have really got to like it. I myself have found few happy chefs.....
I have identical nephews who are dyslexic and although they cannot read or write very well, they have both done a bricklayers course and one came top in his county. Any job is better than nothing and they have their pride. Also one took his theoretical driving test with an "interpreter" reading the q's and he answered them and he passed. We are proud of them as they won't let their dyslexia hold them down!
