Cool to cold (but never freezing) and dark place. Put them in a paper bag... better yet a burlap bag, but not plastic since the plastic will keep moisture in.... They'll sprout short runners out of some of the eyes, but that's Ok...
We keep ours in potato sacks in a big dustbin in the garage. We then pack the outside of the bin to keep the frost out. If kept cold and dark they last all winter and we have even been known to have the last few just about planting time.
