You could try making a sweet white sauce and add green colouring and mint essence. ( I used to be a school cook years ago) . I used to serve this with choc sponge.

Nicked from a discussion site with a similar question:
"hi i was a school cook for 20 years the way we made the mint custard was cornflour @sugar mixed with milk to a paste then pour into boiled milkand stirred to thicken we then added peppermint flavouring to taste you then use green food colouring to colour. Icannot remember the exact quantities you will have to play about with it"

Here's a more grown-up version ('cos it's got Creme de Menthe in it!):

Still sounds gruesome to me.......sorry!
melt a couple of mint aeros into normal birds or ambrosia custard. It goes a funny colour but tastes lovely.
Old School Meals cook here too... don't forget Ginger Pudding and White (Vanilla) sauce and also Pink (Strawberry flavouring & Cochineal) Custard, also served with Choc Sponge. Other old favourites include Caramel Flan, Eve's Pudding, and my favourite, Date Slice :)

Top of the list of "Things That Didn't Do Me Any Harm When I Was At School But Are Probably Banned by the EU Now" is chocolate sponge and pink custard. The custard glowed in the dark and didn't really taste of much, but it's just about the only positive memory I have of junior school dinners.

Oooh I remember Pink custard we loved it.We always had that with Chocolate Concrete which was my favourite pudding.Unlike Sponge it was sort of like a chocolate flavoured shortbread.Yummy !!
We used to call it chocolate crunch it was delicious with pink custard. My junior school had the best puddings ever.
i have finally found the answer to the mint custard recipe.

you will need:
1 sachet of birds normal custard (around 75g)
peppermint essence
green food colouring

To prepare:
empty the contents of the sachet into a jug and fill up to the 3/4 pint level and stir until it looks like normal custard. Then add a capful of peppermint essence and a capful of green colouring and wahllah go get your chocolate cake and its beautiful .. i am eating it right now. very nice lol
It was my fave too along with cheesy pie for dinner, I tried the food colouring and peppermint essence was not the same.
