quorn. why does it have to be used up so fast?

on many unfrozen chilled quorn products, it says on them "once opened consume within 24 (or48) hours"
why has it got such a low fridge life?
it has no meat fish or dairy in...so why?

So the risk might be more associated with the rapid formation of mould than with bacteria. (Refrigeration can substantially slow the development of bacteria but it's far less effective at slowing mould growth).
