It's perfectly normal whatwhat - one row knit one row purl (stocking stitch) does twist back on itself. The only thing I have done in the past is to start to roll up the scarf as I knit, and safety-pin the roll at each end in an attempt to keep it at flat as possible while working it. However, depending how long it is, this can make the work heavy and drag a bit, so I've usually pinned the sausage so it sits in my lap while knitting, which reduces the drag.
