Returning from meetings in Bristol by train today I gazed out the window and enjoyed the countryside, alas I thought how come cos big as they are huge in fact are so big when all they eat is grass??! Should I change jobs lol or has this puzzled others?!

Many rodents and other small animals eat grass as well. The body size of the animals is purely genetic. Cows are able to derive sufficient nutrition from the 50 to 100 pounds of grass or hay they eat each day, just as mice and goats are able to get the nutrition they need from much smaller amounts. Grass and hay, which nothing more than dried grass, are highly nutritious, especially to ruminants... By the way, elephants primarily, eat grass as well...
