got some left over cooked chicken from last night, any ideas how i can use this up? dont want to go down the curry route though, makes the house pong! nor chinese!
Fry onions till soft, add some chopped bacon and mushrooms and fry a bit longer. Add about 1/2 glass white wine and reduce, Stir in cold chicken pieces, keep cooking until the chicken is thoroughly heated through and then stir creme fraiche or yoghurt, season to taste and serve on a bed of pasta. I add basil leaves and spinach with the chicken pieces and sometimes cashew nuts for some crunch.
