What are the best kind of spuds to make chips with?

we use Maris Piper or Edwards - different, but both good.
To get the best chips, fry with the lid on for a bit - this cooks them through - .then lift them out and get the fat really hot before putting them in again - careful, they're soft at this stage. If you shake them before putting back the second time, you get them crispier.
