NoMercy, thanks for posting that recipe. i used to do it years ago and had long ago lost the recipe for it. am going to have a bash at is tomorrow, it was delicious - and sooo good for you with all that bran and fruit.
just been googling around and have found a very similar recipe, except it uses milk instead of tea, and you use one egg so no use as an eggless cake :) the quantities are halved too, just one cup of everything. think i'm going to try both and see which i prefer. nomercy's is probably the healthiest option, being totally fat free.
NoMercy!I tried to make all bran cake with this recipe with low fat milk instead of black tea.It was nice but it was not spongy but heavy and hard loaf.Can you tell me how to get soft spongy bran cake without butter or egg like things?
