Soup recipes
What's your favourite easy soup recipe? I'm tucking into a bowl of tattie soup, real soul food and so easy! I just heat some oil, chuck in a few chopped onions, a couple of chopped carrots and a ton of tattie chunks, salt and pepper liberally added and boil for ages. More like a stew really, but needs no stock so 100% veggie, cheap, quick and dead healthy.
I'd love to know more basic quick soup recipes .... drool

Red Lentil and Carrot Soup
1 teaspoon vegetable oil
1 small onion, finely chopped
2 carrots, diced
1 bay leaf
500 ml (18 fl oz) hot vegetable stock made with a stock cube
100g (3oz) red lentils, washed
Heat the oil and fry the onion, carrot and bay leaf for a few minutes. Stire in the hot vegetable stock with the lentils, return to the boil, cover and simmer for 10-15 minutes until the lentils are soft and mushy. Stir well and either mash the lentils a little with a large spoon (or, what I do, bung it in the blender).
