commencing maternity leave
should my maternity leave start date be my decision entirely, or can my manager stick his beak in to try to delay it?

I took 2 weeks A/L before my maternity started which I requested months beforehand. If anyone booked leave or went sick etc., it bore no relevance to my plans.
One thing I wouldn't do is bring your maternity forward otherwise you will lose out on a few weeks at the end of the maternity. You want to enjoy as much time with your baby as possible. I'm dreading going back to work.
