potato hash

when i was younger i always remember my nan making potato hash when i had a cold becus it is full of goodness, my little girl is really poorly so i thought id try it with her but when i look it up everyone makes it by frying it and putting egg in it! Sounds horrible! I remember potato corn beef carrott onion all being in a pan boilin for ages in a gravey im guessin you use stock cubes? Then served with brocoli anyone eles had it like this? And how much of everything do you need and how long do you boil it for?

When I make it, i make a MASSIVE pan of it, as it freezes well, and great for taking to work for lunch etc.
So ,my ingredients are usually (nmow bearing in mind, i do freeze alot of it!) A whole bag of spuds, Two onions, two tins of corned beef, 4 oxo cubes and plenty of salt and pepper.
I cube the potatoes up quite small, and boil them until they're soft. Add the onions, corned beef and oxo cubes, turn it down and simmer for a good hour or so. Then I drain some of the liquid off (if still alot in it) and half mash. I quite like it lumpyish. and serve with loads of bread and butter. And picked beetroot or cabbage.
