Glaze for roasted gammon

I was going to cook a gammon tomorrow (a la Gordon). Glaze needs demerara sugar, madeira, sherry vinegar and honey. I've got everything apart from sherry vinegar (haven't got any sherry either). What would be a good substitute?

Lots of good ideas there - thanks guys! I am liking the port idea - the port we've got tastes like bloody vinegar anyway (think it's been open a bit too long) so I could use that up which would justify opening the other bottle.
I shall just be pleased to have a non turkey meal. Just stripped the turkey carcass and even the cats are sick of it.
