light Fruit cake
does anyone have a recipe for a light-ish fruit cake that keeps? I am making my daughters' wedding cake and they want 3 types. the traditional rich (which I have a good recipe for and it will keep) a light fruit cake, but the recipies I have say only keeps 1 or 2 weks tops and a sponge. My sister in law is helping with decorating and can only help 6 weeks prior to the wedding and with all the other things I have to do I can't make and decorate the cake just a few days before. Maybe the light fruit cake recipe I have will kep for a lot longer once marzepanned and iced, I don't know.
