Anyone know of a more healthier way of cooking this? Is it possible to bake it (for example)?

Use one of those whole camemberts or baby bries which come in a little wooden (not paper) box. Remove the plastic or waxed paper wrapper and replace with foil or baking parchment. Pierce the top with a skewer a few times and (optionally) drizzle a little dry white wine onto it and then bake it in a hot oven for about 20 mins
The rind should hold it all together and the pierced top will prevent explosions of boiling cheese.
Serve as is with crusty bread or something to dip into it - a bit like raclette I suppose.
