Gran Canaria - Suggestions?

I'm going on holiday to Gran Canaria in the second week of April. Can anyone give me some tips as to the best restaurants, markets, attractions etc., that are off the beaten tourist path? I'm keen to avoid the 'English-fied' areas, so any info. would be welcome! Thanks.

The jeep safari (although 'touristy') is good fun - takes you up the volcano on dirt roads with stops in some of the less visited areas. (but don't go if you are a nervous passenger.... the roads are bumpy, narrow and are often carved into the side of the mountains + the drivers go veeerrry fast!)
