I have just acquired a home hot smoker and wondered if anyone had used one of these before and can recommend something simple to try out for a first attempt, any other hints or tips appreciated.
thanks both of you, I am tempted to try smoking a duck breast, but on reflection, seeing as how the person I got the smoker from used to be a fisherman (primarily trout) and got it specifically to smoke his catch of the day, I think I will have to try the trout first. (should have been obvious to me - facepalm!)
