Waffle Berry Bread Pudding
Lush - needed sharing :-))
INGREDIENTS:
2 packages (240g each) waffles
150g / 5½ oz white chocolate, chopped, divided
300g / 10½ oz frozen raspberries, divided
55g / 2 oz caster sugar
1 tbsp plain flour
500 ml / 18 fl oz sour cream or crème fraiche
3 eggs
½ tsp vanilla essence
2 tbsp icing sugar
Vanilla ice-cream optional

Preheat oven to 200C/400F/Gas 6.
Cut waffles into 1 inch pieces.
Coarsely chop white chocolate.
Place half of waffles in deep baking thing (glass).
Sprinkle with half the chocolate and half the raspberries.
Repeat layers.
Place in microwave cook for 3 minutes on high, or until raspberries are defrosted.
Combine sugar & flour.
Add sour cream, eggs and vanilla essence.
Whisk.
Spoon evenly over top of raspberries
Bake for 30-35 minutes or until golden brown and set in centre.
Sprinkle with icing sugar, serve with ice-cream
