Is there anyway I can check if an email sent via Windows Live Mail has been received/opened?

Not really no.

You can request for a read receipt to be generated by the receiving system but the recipient gets given the option of if they want the read receipt to be sent or not so there is no guarantee you'd get it even if you request one.

Thanks chuck that's what I thought.

I'm pretty sure my mails have reached their destination, and been opened, but I have no way of confirming it.
I never send read receipts unless I know the sender has sent the email to doznes of users. Then I reply out of badness to fill up their inbox.
I only send read receipts when there's a K in the month
