I have had three things delivered by the postman this week (one letter and two parcels) with stickers on saying 'signed for' and I have not been asked to sign for any of them. Do you think I should contact the post office or leave it?

There's no way of actually "tracking" any Recorded post that goes missing, though, hence the massive difference in price between that and Special Delivery, which you can track at 8 different points of its journey and we always recommend at the PO.
I am always grateful to my postman (he is a lovely bloke) for not making me go to the sorting office to get whatever it is. If the article you have ordered is O.K why worry? It might be a different story if there was something missing, but if not I can't see any cause for complaint. I go along with Sir Andy for this.
