omeprazole (gastric-resistant caps)

My 7 month old daughter was prescribed the above today for reflux (she refused to take Omeprazole MUPS, and has been taking Ranitide, which is not working well).
We've been given sodium bicarbonate solution to disolve the capsules in. Forgot to ask the pharmacist...would it be ok to then mix the sodium bicarbonate/omeprazole solution with food or milk formula, if she won't take it?
And...should she have a break between taking Ranitidine and the new meds. She's already 1 dose of Ranitidine today, so should we finish todays doses then start on the omperazole tomorrow, or does there need to be more of a break?
