Basically i don't want another shot at getting food poisoning but . . . I have egg noodles and tinned tuna that need using up, so can i do a stir fry of sorts and put the tuna in that, or should I cook the noodles and some vegtables sperately, wait for to go cold, then mix them together?

You could do either, I'd go with the first option

there is no problem using tinned tuna in hot food. My mum used to make kedgeree with tuna and rice all the time. Sounds yummy with a stir fry would just add at last minute.
