why is butcher's meat better?

we treated ourselves to a lovely fillet of beef from a local butcher today.
I cut it into thick steaks, and pan fried with just a little seasoning.
There was quite a lot of marbling, whuch just melted away.
They were the the most delicious, tender fillets I've ever tasted (despite the fact that i did overcook a tiny bit)
The last time we did this, we got them from the supermarket and were so disappointed with them.
Why do they taste so good from the butcher? It shouldn't make that much difference, surely? They were both the same cut from the same type of animal!

Step one... get drunk. Step two... find somebody that has never tipped over a cow before and if they aren't drunk get them drunk. Step three... get them to agree to go cow tipping. You'll never get anywhere near a cow drunk in the middle of the night but its a lot of fun trying to sneak up on one. No cows are harmed or tipped over in this process but the exercise of cowtipping does exist.

Carakeel, your Morrison's must be very different to my local very large Morrison's. They can't supply skirting, aitchbone, cheek, pigs heads, trotters and so on - which they would be able to do if they were butchering carcasses on site. All of which I buy regularly.

Rib Eye steak from the co-op? Wow! Every time I hear the advert "The Co-op, good with food." I cringe. Rump steak or rump steak or braising steak. Kidney? No. Liver? No. Turkey? No. Any bird but chicken? No. Lime pickle, celery salt. drinking yoghurt, fish apart from frozen? No. Get the idea? Boring. It is not always convenient to take a 20 minute bus ride to another supermarket or one which requires a change of bus.No butcher or fishmonger without ntaking a bus and then walking. Oh for a Delicatessan

daisynonna, i love my cwop! We have several nearby, including a big one and they sell everything!
I'm wondering how we will get on if we sold the car. There is only one bus to take us to our local supermarket. and it stops running at 2pm during the week. We are lucky that we still have a butcher and a baker and greengrocers shop in our town. Our other local areas don't have much at all, the supermarkets have killed the local trade.
Our co-op is a bit like that Daisy. They do sell fresh duck sometimes though...and a small amount of fresh fish.

I can buy skirt and aitcbone from my Morrisons and when talking to the butcher he k nows all the cuts and how to best cook them.

I much prefer butchers meat to supermarkets. The supermarkets inject so much
stuff into their meat, you don't know what you are eating. Butchers meat is a lot
more expensive but worth it as it tastes far superior.
Our village has 3 butchers shops (2 owned by one family) They are all very busy,queues every Friday and Saturday.They have a blackboard which lists which local farm has supplied the meat. It is a little more expensive but definitely worth waiting for. I too would rather have decent meat once a week than rubbish 3 or 4 times.They also make all their own sausages which are lovely. I don't think I've bought meat in a supermarket for over 10 years...I find the quality terrible.I dread to think what it's injected with to make it so red...totally unnatural.
