I downloaded this programme to try it out. Somehow or other, lots of files (jpeg, pdf, etc) have become associated with it - which I don't want! Can I just uninstall the software to get back to my original way to handle these various files, or is there another, safer way to "disassociate" them? Many thanks.

Provided that the uninstaller is well-behaved, then uninstalling the program will revert the associations to their previous values.
If you want to keep the program, but still want to revert the associations, you can do it manually for each file type:
Right click on a file, choose "open with"
Choose the program that you wish to open it with and check the "always use this program box"
In future, when installing new software, read each screen carefully before clicking the "next" button. Almost all programs will ask your permission before changing any associations.

That you will need to manually reset the associations as I described above.
You could also try a system restore to a time immediately prior to the installation, though I'm not a fan of system restore due to the possibility of unwanted side-effects.

If mine were a brand new laptop, running Vista, and I put into it a memory stick containing a number of jpg/jpeg files, what program would open them by default? Thanks again for any help.
