I have made about 5lbs of blackcurrant jelly jam but cannot get it to set. I have put a bottle of pectin but still no good. Don't know where I went wrong as I make it every year. Any ideas please. Thanks
Well, if it hasn't set it hasn't got upto temperature. You'll need to boil it up again until it gets to setting point. I use the saucer method. Maybe you've added more water or maybe the currants aren't as 'strong' this year. Some years it can set in 10 minutes some years it takes me 45 mins!!
