Sourdough bread

Does anyone else bake their own sourdough bread? My starter has now been on the go for 3 years and just seems to get better. My latest batch is proving at the moment.

I fully understand your satisfaction... here in the rural western U.S., sourdough starter is still often given as a wedding present. Ours is nearly 30 years old and still in the same covered "Redwing" crock as when we got it...

Nothing wuite like sourdough with the extra thick crust... especially on a winter's morning, no?

how does a starter live that long?
It's like Dr Who....it gets rejuvenated!

Feed it every time you use it, or every couple of weeks if you don't use it, and keep it in the fridge
but 30 years? why doesn't it go manky?

I suppose it doesn't go manky because it's constantly being rejuvenated by the feeding process. If you don't use it, you chuck some out before you feed it so although the quantity is constant, the content continually changes.
